Hi everyone! Wow, where do I begin?! I cannot believe it's been over three months since my last blog post... it feels good to be back! A lot has been going on recently and since everyone is quarantined at home I thought I would share one of my favorite (and easiest) dessert recipes... crêpes! I modified this recipe to be gluten free so if you are not gluten free just substitute the gluten free flour for regular flour, that's it!

The ingredients needed for the crêpe batter are:
1 cup flour (I use Bob's Red Mill GF Baking Flour)
1 egg (beaten)
1 - 1 1/3 cup of milk
1/2 teaspoon salt
1 tablespoon white sugar
1 teaspoon vanilla extract
Olive oil or butter - for pan
Directions:
(makes approximately 8 crêpes, depending on how big you make them)
Beat the egg in a separate bowl, set aside. Combine 1 cup of milk and flour together gradually, stirring the entire time. Once the milk and flour is combined, add the beaten egg, salt, sugar, and vanilla extract, mix to combine.
Note: you want the batter to be very thin and smooth. If it is thick or has clumps, add a little more milk. I start with one cup of milk and then slowly add more until I get a good, thin, clump free consistency.
Preheat the pan/skillet over medium heat (use whatever size skillet you want). Once it is hot, brush olive oil or melted butter onto the bottom of skillet (this is to prevent sticking- I use olive oil but other recipes call for butter, either works!)
Using a 1/4 cup, scoop the batter and pour it onto the skillet while moving your wrist in a circular pattern to coat the pan with a thin even layer of batter. Cook for about 1 minute or until the first side browns lightly, then flip and cook 45 seconds to 1 minute longer. Remove to a plate and repeat with remaining batter.
Fill with whatever you want & enjoy! Some tasty filling options are nutella, dulce de leche, peanut butter, chocolate sauce, fruit, crushed up cookies or graham crackers, marshmallows, etc! Also, don't forget to top with whipped cream, powdered sugar, and ice cream!

There you have it, gluten free crêpes! They are so tasty and you can't even tell they are gluten free! My family isn't gluten free and they all love them. If you make them, let me know!
